Chesapeake Bay Bruschetta

  • Olive oil
  • 6 oz. fresh crabmeat
  • 6 oz. tiny shrimp
  • 6 oz. bay scallops
  • 1 cup Sting Ray® Bloody Mary Mix
  • 1/2 cup flat leaf parsley, chopped
  • Butter
  • Italian bread or linguini noodles
In a sauté pan, heat a little olive oil and add crab, shrimp and scallops; cook for two or three minutes, stirring occasionally. Pour in Bloody Mary mixer and heat for 8 to 10 minutes, stirring occasionally. Liquid should reduce. Remove from heat, stir in parsley, and top with a pat of butter. Serve over sliced and toasted bread or prepared noodles. Serves six to eight.
