Crab Tartlets

You will need eight 5-inch tartlet dishes for this recipe.
  • 4 or 5 mushrooms, chopped
  • 2 tbsp. butter
  • 4 eggs
  • 1 c. sour cream
  • 1 c. cottage cheese
  • 1/2 c. Parmesan cheese
  • Pinch of salt
  • Pinch of pepper
  • 4 tbsp. flour
  • 1 tsp. onion powder
  • 6 drops TABASCO® sauce
  • 2 c. Monterey Jack cheese, shredded
  • 6 oz. fresh crabmeat
  • Cooking spray
  • 1/2 tsp. Blue Crab Bay Co.® Chesapeake Bay Seasoning
Preheat oven to 350 degrees F. Saute mushrooms in butter, then drain. Blend eggs, sour cream, cottage cheese, Parmesan cheese, salt, pepper, flour, onion powder, and TABASCO® until smooth. In a large bowl, combine Jack cheese, crabmeat, and mushrooms. Pour blended mixture over cheese-crab mixture; stir until combined well. Spray tart dishes with cooking spray. Divide mixture among dishes. Sprinkle with Chesapeake Bay Seasoning. Bake 20 to 25 minutes until tartlets are puffed and golden. Cool 5 minutes in pans. Remove and serve hot. Garnish with orange and red pepper slices or parsley as desired.
