Muffled Eggs with Shrimp

  • 12 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. Blue Crab Bay Co.® Chesapeake Bay Seasoning
  • 1/2 c. onions, chopped
  • 1/2 c. leeks, chopped
  • 1/2 lb. fresh shrimp
  • 1/2 c. cheddar cheese, shredded
Preheat oven to 350 degrees. Beat eggs. Add salt, pepper, and seasoning. Stir in onions, leeks, shrimp, and cheese. Spoon by 1/3 cupfuls into greased muffin tins. Bake for 20 to 25 minutes or until knife inserted near center of egg muffin comes out clean. Serves 12.
